  • 150g kreemist kookospiima (mina kasutan Santa Maria Extra Creamy kookospiima)
  • 100g mandlipiima
  • 15g erütritooli (vm suhkruasendajat)

  • 1 1/2 želatiini lehte (kui soovid kõvemat magustoitu, kasuta 2 lehte)
  • Tarretise kate:
  • 40g sea astelpaju marju
  • 60g vett
  • 15g erütritooli (vm suhkruasendajat)
  • 1/2 želatiini lehte
JUHISED
  • SAMM 1 Leota želatiini lehti külmas vees 10 minutit, kuni need on pehmenenud.
  • SAMM 2 Pane väikesesse kastrulisse kookospiim, mandlipiim, magustaja, näputäis soola ja vaniljet. Kuumuta keskmisel kuumusel, ära aja segu keema.
  • SAMM 3 Sega sisse leotatud želatiini lehed ja sega korralikult.
  • SAMM 4 Vala segu 2 magustoiduvormi. Lase kõigepealt toatemperatuuril jahtuda ja seejärel jahuta külmikus kuni magustoit on tahenenud. Kui on kiire, siis võib vormid korraks sügavkülma ka panna.
  • SAMM 5 Püreesta astelpajumarjad koos magustajaga.
  • SAMM 6 Kurna segu läbi sõela ja soojenda pisikeses kastrulis koos magustajaga. Sega hulka 1/2 leotatud želatiini lehte.
  • SAMM 7 Lase segul täielikult jahtuda ja vala juba tahenenud magustoidu peale.
  • SAMM 8 Mina kaunistasin magusoite kireviljaga.
  • SAMM 9 Lase panna cottal külmkapis taheneda 3-4 tundi või üle öö.

JUHISED
  • SAMM 1 Sega keskmises kausis munad, pulbrid, linaseemne jahu, vesi, sool ja maitseained ühtlaseks massiks.
  • SAMM 2 Taigen on esialgu vedel, kuid lase sel paksemaks muutuda 5–10 minutit.
  • SAMM 3 Vala 1/4 taignast kuumale ja õlitatud pannile ja kalluta panni, et taigen ühtlaselt jaotuks.
  • SAMM 4 Küpseta mõõdukalt kõrgel kuumusel, kuni pannkoogi servad hakkavad pruunistuma. Pööra pannkoogil teine külg ja küpseta.
  • SAMM 5 Ülejäänud taignast peaks tulema veel 3 pannkooki.

JUHISED
  • SAMM 1 Kuumuta ahi temperatuurini 160 ° C. Sega pehme või ja magusaine kreemjaks. Lisa sool, vanill, koor ja munakollased. Sega uuesti, kuni kõik on kokku segatud. Lõpuks lisa jahu-sooda segu ja sega hästi läbi.

JUHISED
  • SAMM 1 Leota želatiinilehti külmas vees.

  • 300g almonds, blended
  • 150g coconut flakes, slightly roasted, blended
  • 1/4 tsp salt
  • 15g (1 tbsp) sweetener (i used Sukrin Gold)
  • 25g (1 tbsp) coconut oil
  • 1/2 lime zest
  • Salt and vanilla to taste

  • Filling:
  • 100g butter, melted
  • 80g sweetener (i used Sukrin Icing Sugar)
  • Pinch of salt
  • 2 eggs
  • 6 egg yolks
  • 12g gelatine (7 leafs)
  • 100ml lime juice (of 4 limes)
  • 200g coconut milk (i used Santa Maria Extra Creamy Coconut Milk)
  • 100g coconut oil

  • Top layer:
  • 500g strawberries
  • 200ml/g water
  • 50g sweetener (i used Sukrin Icing Sugar)
  • 12g gelatine (7 leafs)
JUHISED
  • SAMM 1 For the crust wash the almonds and let them dry out again.
  • SAMM 2 Slightly roast the coconut flakes (and almonds also if you like) 160C about 5minutes, until they turn slightly golden.
  • SAMM 3 Let then cool down and blend in a foodprocessor until becomes a flour. Mix with coconut oil, season and press into the base and up the sides of a 28cm loose-based tart tin.
  • SAMM 4 For the filling beat the eggs together with melted butter, sweetener and pinch of salt. Add coconut milk and oil. Heat the mixture on a low heat until it warm enough for the gelatine to dissolve. Then whisk in pre soaked gelatine leaves. At last add the lime juice.
  • SAMM 5 Let the mixture cool down and pour into the crust. Put it into refrigerator or freezer.
  • SAMM 6 For the top layer slice the strawberries and strain the juice. Add 200ml water and sweetener to the juice and heat it on a small saucepan until it becomes warm enough for the pre soaked gelatine leaves to dissolve. When this mixture is ready and the gelatine is dissolved, add the strawberries.
  • SAMM 7 When it is completely cooled down, pour the mixture to the cake. Let it sit another hour in the freezer or couple of hours in the fridge.
  • SAMM 8 Can be served half-frozen or just chilled. I love it half-frozen! Decorate with fresh strawberries.

  • 60g cream cheese (25%)
  • 3g (1 tsp) psyllium husks
  • 20g (2 tbsp) olive oil for frying
  • 40g berries (i used wild strawberries) and some low carb syrup (i used Fibersyrup) to serve with.
JUHISED
  • SAMM 1 Whisk all ingredients together and let it sit for a moment before frying, to let the bubbles settle.
  • SAMM 2 Pour half of the batter into a hot pan greased with 10g (1 tbsp) of olive oil (or butter/ghee).
  • SAMM 3 Cook for 2 minutes until golden, flip and cook 1 minute on the other side.
  • SAMM 4 Serve with half of the berries (20g) and syrup (i used Sukrin Fiber Syrup).

  • 80g dark sugarfree chocolate (i used ''Torras'' chocolate)
  • 60g butter
  • 1 egg
  • 1 egg yolk
  • 20g sweetener (i used Sukrin Icing Sugar)
  • 10g Fiberfin (resistant potato starch) or coconut flour
  • 10g coconut flour
  • Salt and vanilla to taste
JUHISED
  • SAMM 1 Preheat the oven to 230C (or 210C fan). Butter the ramekins and add lightly cacao powder.
  • SAMM 2 Melt butter and chocolate on a water bath or on a very low heat.
  • SAMM 3 Whisk together eggs, salt and sweetener untill smooth and pale. Then add flour, mix again and fold in the egg mixture.
  • SAMM 4 Pour the batter into the prepared ramekins and bake for 10-11 minutes, or until the sides of the cakes are firm but the centers are soft.
  • SAMM 5 Let the cakes cool in the ramekins for a moment, then cover each with an inverted small plate. Carefully turn each one over and then unmold.
  • SAMM 6 Serve immediately. Garnish with low carb icing sugar and raspberries.

  • 45g berries (i used raspberries)

JUHISED
  • SAMM 1 Preheat the oven to 170C.
  • SAMM 2 Whisk eggs with pinch of salt and melted butter until creamy.
  • SAMM 3 Mix all dry ingredients together and add into butter mixture.
  • SAMM 4 Butter in three small cake cups. Devide1/3 of the butter between the cups, add the raspberries (15g per cup) and pour in rest of the batter.
  • SAMM 5 Bake 170C around 20 minutes, until cakes and fluffy and lightly golden.
  • SAMM 6 Garnish with low carb icing sugar.

  • 100g (raw, organic) cocoa butter
  • 20g coconut oil
  • 40g (raw, organic) cocoa powder
  • 10g lucuma powder (makes the chocolate extra creamy)
  • 60-70g sweetener (i used erythritol)
  • 10g chia seeds
  • 25g chopped hazelnuts
  • 25g chopped almonds
  • Bit of salt and vanilla to taste
JUHISED
  • SAMM 1 Melt all the ingredients besides nuts and seeds on a small saucepan on a waterbath or on a very low heat (the mixture should not get hot at all). Whisk constantly until everyhting is dissolved.
  • SAMM 2 Add chopped nuts and seeds, stir well.
  • SAMM 3 Transfer the chocolate mass into candy moulds and place it into fridge until set. I decorated some moulds before pouring in the chocolate mass with gold dust, freeze-dried berry dust, hard candy dust, cocoa nibs etc stuff. The ways to decorate the candies and give them different tastes is endless.
  • SAMM 4 Keep refrigerated, because these candies will melt quite fast at room temperature.
